The weather here in Maryland is officially turning. My MOMS group is starting to make plans for a Fall festival, and our windows have been open for two days now with the air off. Ahhh... Honestly, I had not even thought about opening the windows all day yet, but my good friend Heather pointed out that I wasn't in Arizona anymore and air conditioning is not a necessity all through the month of August! Haha! Thanks Heather- I'm loving having my fans on and enjoying the quiet chirping of my neighborhood.
Anyway- the other day (after smelling the cool night-time air) I could not help but get an itch to make a pie. I've never really been much of a baker (AZ trait again) but with this weather it just seemed like the right thing to do. So, I got to work making my own crust and looking up recipes for apple pie.
Here's how it went... (I didn't think about taking photos of my project 'til after the crust was made so picture me using the food processor, butter, and ice water to create the perfect blend.
Step by step:
Anyway- Just had to share my little intro to the Fall season with you guys... I know it's still a little early but if stores can have Halloween stuff out already, I think I'm entitled to make a pie! So there!
P.S.- If anyone has an awesome recipe for apple pie filling, I'm looking for a suggestion. I read one last night that suggested a little flour around the apples to thicken things up...

Your pie looks delicious. I need to find the filling recipe for my pie....I bet it would be great in that shell. I know mine does have a little flour...YUM!
Glad you are enjoying the windows open...isn't it fab to enjoy that fresh smell in the house. I LOVE IT!!

P.S. Most Augusts I would have my air on all month, but this year has been unseasonably cool. Now September and October are a whole nother story!!
I really MUST comment on your lovely pie, however as the leader in technology for this family I must protest that you have not yet figured out how to share a slice cross-country.
Do you see how easy I am to please... we can start by transporting pie, then get Jillian to volunteer for transport.

Your pie looks wonderful! I have been very successful making apple pies and have never used a filling. Try this: slice your apples thin about 1/4" into a large bowl. Add sugar and cinnamon and allow to sit for about 15 min. Stir. The apples will release their juices while they sit. Add 1/2 to 3/4 stick of melted butter and stir well to coat apples. Pour into pie pan and over with pastry crust. Bake as per your original recipe.

Your pie looks wonderful! I have been very successful making apple pies and have never used a filling. Try this: slice your apples thin about 1/4" into a large bowl. EDIT: Add sugar and cinnamon ACCORDINGLY, STIR TO COAT APPLES WELL and allow to sit for about 15 min. Stir AGAIN. The apples will HAVE released their juices while they sit. Add 1/2 to 3/4 stick of melted butter and stir well to coat apples. Pour into pie pan and cover with pastry crust. Bake as per your original recipe.

Look at you...you are just a little Martha Stewart! :) I have never baked a pie either. And your apple pie looks delicious! And I must say I got very jealous reading your detatiled description of the weather there and how you are able to open our windows and turn off the AC...It is still miserably hot here back in good ol' AZ!
